Pork and Butternut Squash Chili
serves 4
Ingredients
- 1 C sweet onion, coarse chop
- 1 lb pork shoulder, 3/4" cubes
- 1 cn black beans, drained
- 1 lb butternut squash, 1/2" cubes
- 1 ea chipotle chile in adobo, fine chop
- 1 C corn kernals
- 1 C beef broth
- 1 T liquid smoke
- 2 t dried oregano
- 2 t ground cumin
- 2 t dried sage
- 2 T sour cream
- 2 T grated cheese
Instructions
- Sweat the onions and brown the pork in a soup pot. Add the squash, broth, liquid smoke, and the herbs and cook until the squash is tender.
- Add the black beans and corn and continue cooking until the corn is just tender. Season to taste.
- Plate and serve with sour cream and grated cheese.
